Coat potatoes in olive oil and bake at 425°F for about 1 hour, until soft.

Make the homemade ranch by combining all of the ranch ingredients. Mix thoroughly until combined then refrigerate until serving.

Cut the potatoes in half, then scoop out the insides into a bowl.

Fry the potato skins in neutral oil at 350°F until golden brown.

Combine the cooked potatoes with butter, cheese, milk, sour cream, chives, SPG blend. Mix thoroughly then stuff each potato skin until it’s ⅔ full.

Season the chicken thighs with your favorite poultry seasoning.

Grill the chicken thighs on the @Kamado Joe over direct heat flipping every 2 minutes until they reach 170F internal temp.

Rest the chicken for 5 minutes then cut into bite sized pieces.

Top the potato skins with chicken, bacon and cheese then bake or grill at 350°F until the cheese is melted.
