1
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
2
In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
3
In the same skillet, add the remaining 1 tablespoon of butter. Add the garlic and cook for 1 minute until fragrant.
4
Add the heavy cream, Parmesan cheese, Cajun Crush Island Vibe Seasoning, thyme, paprika, cayenne pepper, salt, and black pepper to the skillet. Stir to combine and bring the mixture to a simmer.
5
Reduce the heat to low and let the sauce simmer for 2-3 minutes until slightly thickened.
6
Add the cooked pasta to the skillet and toss with the sauce until the pasta is well coated. If the sauce seems too thick, add a little of the reserved pasta water.
7
Return the chicken to the skillet and toss with the pasta and sauce until the chicken is well coated.
8
Serve the creamy Cajun chicken pasta hot, garnished with chopped scallions.
