In a bowl, mix the steak with some oil and all the seasonings. Let that marinate while you prep the mac.

Shred cheeses and mix together. Set aside.

Boil pasta in water that has been generously seasoned with chicken bouillon or salt until al dente, 1-2 min below box instructions.

Melt butter and bloom the spices - garlic powder, paprika - for 1 min. Then add the flour and cook for a 1-2 mins.

While whisking, slowly add in the heavy cream and evaporated milk. Whisk until smooth.

Once the mixture warms up again (but NOT simmering) turn off the heat and stir in half of your cheese mixture in batches until combined.

Layer in a baking dish, starting with half the mac mixture, half of the leftover cheese, the rest of the mac, and finally the rest of the cheese. Sprinkle some paprika on top for color.

Bake at 375F for 25-30 min until golden. Broil on low for a few min for more crust if desired.

While the mac is baking, add oil to a pan and sear the steak until desired doneness and it develops a nice crust.

1 min before the steak is done, add 1/2 stick butter, garlic, and shallots and cook for the remaining time.

When mac is done baking, rest 10 min before serving and top with the steak bites.
