Heat a frying pan over high heat.

Season the steak all over with half the fajita seasoning.

Cook the steak for 2-4 minutes per side, depending on thickness and preferred doneness, until nicely charred.

Transfer the steak to a plate and leave to rest.

Add the sliced peppers and red onion to the same pan until softened then season with the remaining fajita seasoning and toss to combine.

Heat the rice according to packet instructions.

Mix together the honey, hot sauce and mild chilli flakes until combined.

Cube the steak and place into the bowl with the hot honey glaze. Toss well to coat.

Mix together the chipotle sauce ingredients.

Divide the Mexican rice between bowls.

Top with the shredded lettuce, peppers and onions, tomatoes and steak.

Finish with chipotle mayo, jalapeños, tortilla chips, fresh coriander and lime wedges before serving.
