Papas Gratinadas

Ingredients

4 large potatoes (russet or yellow)
2 cups heavy whipping cream (or 1 cup heavy whipping cream + 1 cup milk)
1 cup cheddar cheese, grated
1 cup mozzarella or monterrey jack cheese, grated
2 tbsp butter
2 cloves garlic, minced (or 1 tsp garlic powder)
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
1/2 tsp thyme or oregano (optional)

Instructions

Preheat the oven to 375°F (190°C).

Peel and grate the potatoes. Soak them in cold water with ice to prevent browning.

Grate the cheese.

Make the cream by mixing butter, garlic, salt, pepper, paprika, and thyme (if using).

Add the heavy whipping cream (or heavy whipping cream + milk) to the cream mixture and mix well.

Gradually add the grated cheese to the cream mixture and mix until well combined.

Drain the potatoes and pat them dry. Arrange them in a baking dish.

Add the cream mixture to the potatoes and top with additional grated cheese.

Cover the dish with aluminum foil and bake for 45 minutes.

Remove the foil and bake for an additional 20-25 minutes, or until golden brown.

Garnish with fresh parsley and scallions, if desired.
